1. Classic Buttermilk Pancakes

You're in for a treat with these classic buttermilk pancakes. They're simple to make and so delicious you'll want to make them all the time.

Ingredients:

1 cup flour

1 tsp baking powder

1 egg, beaten

1 cup milk (or whatever milk you like)

2 tbsp melted butter (optional)

Directions: 

Step 1: In a medium bowl, mix together the flour and baking powder. Set aside.

Step 2: In another bowl, mix together the milk and egg until well combined. Add this mixture to your dry ingredients and stir until just combined (don't overmix). If you're using melted butter, add it now as well!

Step 3: Heat up your pan over medium heat (or whatever heat setting your stove has). When the frying pan is hot enough that water sizzles when dropped onto it, drop about 2 tbsp of batter onto the pan to form each pancake.

2. Sour Cream Pancakes

 Ingredients:

1 cup all-purpose flour

1/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon salt

2 Tablespoons butter, melted and cooled slightly

1 egg, beaten

3/4 cup sour cream

Directions:

Step 1:  In a large bowl, combine the flour, sugar, baking powder and salt. Add in the butter and stir to combine. Stir in the egg and sour cream until just combined (do not overmix). Let the batter sit for 5 minutes before cooking pancakes.

Step 2: Heat a nonstick griddle or frying pan over medium heat until hot enough to make a drop of water sizzle when flicked onto the surface (about 350 degrees F). Spray with nonstick spray or grease lightly with butter if desired. For each pancake, pour 1/4 cup of batter onto the hot griddle (you should be able to fit 3 at a time). 

Step 3: Cook until bubbles form on top of each pancake and burst open; flip them over and cook until golden brown on both sides (about 2-3 minutes per side). Serve immediately with more sour cream if desired!

3. Cinnamon Apple Pancake Recipe

Ingredients:

2 cups all-purpose flour

1 teaspoon baking powder

2 teaspoons cinnamon

1/2 teaspoon salt

2 large eggs, beaten well

2 cups milk (or buttermilk)

1 cup applesauce

1 tablespoon vanilla extract

Directions:

Step 1: Preheat the oven to 200 degrees F (95 degrees C). In a large bowl, mix together flour, baking powder, cinnamon and salt. Add beaten eggs and milk or buttermilk. Mix until smooth. Add applesauce and vanilla extract; mix until incorporated. 

Step 2: Pour batter into a greased 8-inch square pan. Bake for 35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack before serving (about 15 minutes).Then enjoy!

4. Peanut Butter and Jelly Pancakes

Ingredients:

1 cup all-purpose flour

1/2 teaspoon baking soda

2 tablespoons sugar

3/4 teaspoon salt

1 egg, lightly beaten

1 cup buttermilk (or 1 cup whole milk + 1 tbsp vinegar)

1/2 cup melted butter or vegetable oil

Directions:

Step 1: In a large bowl, combine dry ingredients. Make a well in the center of the dry ingredients, pour in the egg and buttermilk, then stir with a whisk until smooth. Add melted butter or vegetable oil and mix until combined.

Step 2: Let batter sit for 5 minutes while preparing pan and heating up pan on medium heat. Add battery to hot griddle; cook until bubbles appear on top and edges look cooked (about 2 minutes per side). Serve with warm syrup.

5. Pumpkin Spice Pancakes with Maple Icing

Ingredients:

1 cup flour

2 teaspoons baking powder

2 tablespoons brown sugar

1 teaspoon pumpkin pie spice (or cinnamon)

1/4 teaspoon salt

1 cup milk

2 tablespoons vegetable oil (canola or canola)

1 egg, slightly beaten (or 1/2 cup egg substitute)

Directions:

Step 1: Mix together dry ingredients in a large bowl. Stir in milk and vegetable oil until smooth and lump free. Fold in beaten egg or egg substitute. 

Step 2: Heat a griddle over medium heat; spray it with nonstick cooking spray if needed. Pour about 1/4 cup batter per pancake onto the hot griddle; they will spread out during cooking so don't make them too big! 

Step 3: Cook until bubbles form on top and edges look dry, then flip over and cook other side until golden brown; about 2 minutes each side or until cooked through (pancakes are done when toothpick inserted into center comes out clean). Serve with maple syrup or your favorite toppings!

6. Cinnamon Roll Pancakes with Brown Sugar Glaze

 Ingredients:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

2 tablespoons butter, melted and cooled slightly

1/4 cup brown sugar, packed (plus 2 tablespoons for drizzling)

1 teaspoon ground cinnamon (plus more for sprinkling)

Directions:

Step 1: In a medium bowl, whisk together the flour, baking powder and salt. In another small bowl, whisk together the milk and butter. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. 

Step 2: Let stand for 5 minutes while you prepare the rest of your ingredients. Lightly oil a griddle or large skillet over medium heat. When hot, drop batter by 1/4 cupfuls onto the griddle or skillet (you should get 6 to 8 pancakes). 

Step 3: Cook until bubbles form on top of each pancake then flip with a spatula and cook an additional 2 minutes on the other side until golden brown. Remove from heat and transfer to a plate lined with paper towels to drain any excess grease from the cooking process.

7. Blueberry Buttermilk Pancake Recipe

Ingredients:

1 cup flour

2 teaspoons baking powder

1/4 teaspoon salt

1/4 cup sugar

1 cup milk (you can use buttermilk if you prefer)

2 tablespoons melted butter or vegetable oil (optional)

Directions:

Step 1: Combine all dry ingredients in a bowl and mix well. Add milk and butter (or vegetable oil), then stir until smooth. If you want thinner pancakes, add more milk until you reach your desired consistency.

Directions:

Step 1: In a large bowl, mash the banana until it is smooth. Add in the oats and milk and stir until combined. Add in the egg if you're using it, then stir in the brown sugar, baking powder and cinnamon. Mix well until all ingredients are combined.

½ cup maple syrup or agave nectar (or any liquid sweetener)

1 teaspoon vanilla extract

Step 1: Preheat waffle iron to medium heat. In a large mixing bowl, combine flour, cocoa powder, baking powder, and salt. Stir in peanut butter until combined. Add milk and maple syrup and continue stirring until batter is smooth; add vanilla extract last.
