Island Treasures gourmet is the thing for us, cute little rum cakes are just the thing we need. Their rum cake is perfect for anyone wanting to serve or gift an exceptional, unique and memorable sweet treat. Island Treasures Gourmet™ is perfect for all ages, as the alcohol is baked out, leaving a smooth, moist, full flavor — one reminiscent of an island vacation, and gatherings with family and friends.

They put the rum in the before baking so the spirits are baked out leaving a smooth flavor, and a moist cake, moist and Smooth Rum Cakes in several flavors and two sizes.The Island Treasures Gourmet vanilla rum cake is a cake made from Cassandra Craig's home recipe. She's a Realtor and it's a family run business. The cakes are shipped nationwide. And all come nice and fresh and ready to eat. These rum cakes make every day an island getaway.



The thing I find awesome is they are vacuumed packed, and have a shelf life of 9 months or more, it's not sickening sweet, it's not dry, and it has loads and loads of flavor. We had the vanilla and the chocolate chip and they were both so good. The larger rum cakes are packed in a re closable container . These can last up to 6 months or longer frozen.  need to worry because of the baking process these cakes have less than 0.5 percent alcohol.

Raspberry Rum Cake Served with Chocolate Mousse
                                     and Fresh Raspberries 
Chocolate Mousse 
16 oz Cold Heavy Cream 
2 Tb Powdered Sugar 
1 ½ Cups Milk Chocolate Chips 
Melt chocolate chips in the microwave while stopping every 30 seconds
to stir. Once the chocolate is melted, set aside to cool slightly. Whip the
heavy cream in a stand mixer using the whisk attachment. Whip until it
thickens and peaks appear. Add the powdered sugar and melted chocolate
immediately. Whip for another 30 seconds or until the mousse is thick 
and fully blended. Can be refrigerated and served later. 



 Coconut Rum Cake Served with Toasted Coconut
Toasted Coconut 
Place desired amount of unsweetened coconut flakes in a large
skillet. Cook over medium heat stirring frequently, until the flakes
are mostly golden brown. 



Chocolate Rum Cake Served with Strawberry Sauce and Fresh
                      Strawberries and Dusted with Powdered Sugar 
Strawberry Sauce 
1 Pint Strawberries 
1/3 Cup White Sugar 
1 tsp Vanilla Extract 
Wash strawberries and remove stems. Roughly chop the berries.
Combine berries, sugar and extract in medium saucepan and bring
to a simmer over medium heat. Cook for five minutes, stirring 
constantly while breaking strawberries up with a wooden spoon. 
After five minutes, remove from heat and allow to cool slightly.
When cool, transfer mixture to blender and pulse until desired 
consistency is reached.
